Roasted Rhubarb
1 lb rhubarb cut into 2" pieces
1/3 cup sugar
1/3 cup crisp white wine
zest of 1/2 orange
1/2 vanilla bean
Place ingredients in baking dish and roast at 350 for about 30 minutes, until tender. Stir occasionally. Serve over ice cream or topped with crème fraîche. It is good warm or cold.
